In the documentation, Bitstamp is listed as a compatible exchange but apparently it has been disabled since. Is it like a permanent drop or is it coming back at some point ?

The star means it's currently not updated. The long story:
When Gekko released version 0.6 the exchange integration was upgraded, but this requires all specific exchange integrations (of which Gekko has 25) to be updated to the new format. I haven't had the time to do all of them. As such you can't use Bitstamp right now with a Gekko version higher than 0.6. It's on my todo (the most requested exchanges), but I am busy right now!
